To make these mini vegan strawberry cheesecakes you will need:
about 1 to 1 and a half cups of fresh almond pulp/meal
1 cup dates
1 tsp cinnamon
1 cup cashews (pre-soak for a day)
2 cups fresh strawberries + more for chopping
½ cup coconut milk
Blend the almond meal, dates, and cinnamon in a food processor to make the crust
Take the crust mixture and crush it into the bottoms of a muffin or cupcake tray
blend cashews, fresh strawberries and coconut milk on high speed to make the filling
Spoon in the cream to fill up the rest of the cupcakes
Chop the strawberries up and sprinkle them on top
Place the cheesecakes into the freezer for at least three hours and then they're ready to eat!
